So I’m picky. Really picky when it comes to my Thanksgiving stuffing. It can’t be too soggy, (PLEEEEEASE, nothing is worse than a mouthful of mushy, wet stuffing), but I still like it soft and not crunchy (also a major injustice) and it should be flavorful, if it’s bland what’s the point? I mean I could just eat a couple slices of bread instead if it’s just gonna taste like bread and celery.
So today I’m going to teach you how to make perfect, simple, best ever easy Thanksgiving stuffing. It’s my weekend gift to you!
Thanksgiving is a pretty wonderful holiday, since it largely revolves around food and you know I’m obviously a fan of food (just a little bit….) but now that I’m in my adult years and realize what actually goes into making and serving a holiday dinner to a large family (read: LARGE family) I’ve gotten a little weary of overly ambitious recipes when it comes to this particular holiday. We are short on time, short on space (as in oven space – those turkeys do not think skinny thoughts and we still have rolls and sweet potatoes to be thinking about here), and the juggling act of getting one zillion side dishes all done, hot, and ready to serve at the same time is nothing short of a miracle.
If you hear what I’m saying and you’re thinking YES that is exactly my house at Thanksgiving!! then you will be overjoyed to learn that this stuffing recipe takes less than 15 minutes to prep and is fixed on the stove so you don’t have to use valuable oven space.
And you might be thinking well, I’ve been using a boxed stuffing mix for years and it’s gotten me be just fine….. NO. This stuffing is just as quick and simple, much better tasting, and you can tell all your guests you made it from scratch which will leave them impressed and you laughing to yourself because you know it was incredibly easy.
Another bonus to this recipe: customizable. You can make it a little more moist by adding a bit of broth or extra butter to the pan, and it’s easy to stir in pecans, cranberries, fresh herbs, or anything else you love to have in your stuffing. This will be your go-to for holiday meals, trust me.
Oh one last question: stuffing? dressing?? What do you call this Thanksgiving side shtuff?
- 16 slices soft bread, cut into cubes (I like to use half whole wheat bread and half white)
- ½ cup butter (see note)
- 1 cup chopped celery (about 4 ribs)
- 1 medium onion, diced
- 2-3 teaspoons dried Italian seasoning blend, to taste
- ½ teaspoon garlic powder
- salt and peper to taste
- optional add-ins: dried cranberries, chopped pecans, fresh herbs like thyme or oregano
- Add butter, celery, and onion to a large skillet and saute over medium-high heat until butter is completely melted and vegetables are very tender.
- Stir in bread cubes and sprinkle with Italian seasoning, garlic powder, and salt and pepper to taste. Continue to stir over medium-low heat until bread is moistened and hot throughout (3-4 minutes).
- Taste, add salt and pepper to taste if needed.
- Stir in any optional add-ins if desired. Use to stuff a 10-12 pound turkey or cover and keep warm until ready to serve as-is.
